At the village level a mill like this sat under an open shed beside the cane fields; a carabao walked a circle at the end of a long sweep arm, turning the geared rollers while one person fed stalks in by hand and another pulled the crushed bagasse out the far side. The juice ran to a trough and then into iron cauldrons, where it was boiled down into dark sugar cakes molded in coconut shells or bamboo tubes. After Iloilo opened to foreign trade in 1855 the scale of production expanded rapidly, and steam mills eventually displaced wooden ones, but mills like this persisted in smaller communities because they were cheap to build and could be repaired by local carpenters. The elbow-chevron teeth distinguish this Visayan example from those of the northern Philippines.
